Neighbourhood: French Quarter
A small and teeming network of laissez-faire living lounged out on the balmy banks of the Mighty Mississippi, the French Quarter has long been a port of call for folks in search of a good time and a great story. Perpetually inebriated Bourbon Street runs across its midriff like a strand of cheap ribbon tied around an otherwise rather pretty and impressively well-kept vintage dress. Throughout the rest of the Quarter, brightly colored Victorian homes and businesses, famously done up with wrought-iron features, provide a distinct and immediately recognizable backdrop for all varieties of fun. At any given moment in this historic riverside setting, some of America’s finest meals are being cooked, most potent cocktails are being mixed, and most engaging music is being performed.

    Mardi Gras School of Cooking
Our group of three couples, all Louisiana residents, took the COOLinary dinner class with Chef Mark. Because most of our group are very good cooks (unfortunately, not me!), we didn’t expect to learn as much as we did! Mark shared many cooking tips along with funny stories. Gumbo, BBQ shrimp, and Bananas Foster were all delicious. We also enjoyed being in such a small group setting. We will definitely take another class.
Thank you for your glowing review of Chef Mark and the Mardi Gras School of Cooking. We really enjoyed having your group for a dinner party. It is wonderful to hear that you and your friends had such a wonderful time learning new culinary skills with Chef Mark. Please join us again!

    Five Stars For Chef Mark!
We had a fun (and delicious!) roux class with Chef Mark, and will definitely look at doing another class next time we visit! It was fun to learn about the history of the food in New Orleans, and about all the various influences other cultures have on the cuisine. We had a great time making gumbo (and learning that making a roux does NOT actually take forever!!), shrimp etouffe & bananas foster. We were having such a good time, I didn't even think to take a picture until we got to the dessert course!! All the staff was friendly and professional, and this is definitely a few hours well spent!
Thank you so much for the fabulous review and recommendation of Chef Mark and the Mardi Gras School of Cooking. It is wonderful that you had such a great time while learning about the history of New Orleans culinary history. Please join us again the next time you visit the French Quarter!

    Learning and Eating!
Thanks to David for making our visit so memorable and enjoyable. From the moment we arrived he made us feel at home. A great teacher and story teller. The set up was excellent and easy to follow along. And the food was amazing! We did the Roux class so enjoyed a gumbo and an etoufee. Also made bananas foster. Even found time for a lagniappe- pralines! A very excellent day! In the small world category, we ran into our cooking partners (a wonderful family from Ga) later in the day near Jackson Square. Highly recommended and would do this again.
We really appreciate you taking the time to share your memorable and enjoyable visit with us, Brian. It is wonderful to learn that you had a fabulous time with Chef David at the Mardi Gras School of Cooking. Please join us again the next time you are in the French Quarter!

Great fun! A super New Orleans experience!
We took the roux class during a holiday in New Orleans (two couples traveling together). It was great fun! Matt, our instructor, explained things well and kept us entertained, as well as keeping our glasses full. The food was delicious and the class gave me encouragement to try some Creole cooking at home. We also had “Breakfast at Brennan’s” during our trip and, I have to say, our Bananas Foster was every bit as good as the original! This was my first cooking class while traveling but it was such a treat that I will seek out other experiences like this one on future trips.
We are so thrilled to learn you had such an amazing time with Chef Mark. It is so fabulous you enjoyed your cooking class with us at the Mardi Gras School of Cooking. Please join us again the next time you visit NOLA! Bon appétit!

    Overall a fun Cooking experience
We did the Sunday brunch class with Chef Cam. He was personable and knowledgeable. We completed eggs Benedict over crab cake, Pig Candy and shrimp and grits. There were two other couples also in our class. Everyone got opportunities to prepare, chop and cook. The food was delicious and plentiful. The experience was about 3 hours overall. We found the space a little small, but workable. It was a good group and we had fun, as well as being well fed!
We are so happy that you enjoyed your brunch class with us! It is so great that you found the food to be so delicious and plentiful. Chef Cam will be happy to hear your praise. We enjoy having hands-on cooking classes with everyone participating in the cooking process. We work to have a fun "dinner party" feel to all our classes, allowing our guests to socialize and learn together. Please join us again for another delicious adventure at the Mardi Gras School of Cooking!

    Excellent vegetarian cooking
We loved our vegetarian Cajun cooking with David. We made vegetarian gumbo, corn macque choux, and bread pudding. David was both fun to spend a class with and also taught us a lot about the dishes. One member of our party is gluten free and he did a great job making substitutions where needed, and explaining why different GF flours work and change the recipes. And the food was delicious!
Samantha, thank you for your stellar review of Chef David and the Mardi Gras School of Cooking. We truly appreciate you taking the time to share your fabulous experience. It is so great to hear how much you enjoyed your time with Chef David and the delicious food. Please visit us again the next time you are in the French Quarter!

My daughter and I had a wonderful evening cooking with Chef Raymond. We made corn and crab bisque, shrimp Creole, pecan pralines, and bananas Foster. We enjoyed hearing his stories of cooking his favorite foods and the creative cuisine he was making. He threw in a little New Orleans history, too. Be sure to pick up a bag of their Mardi Gras Magic seasoning and a roux spoon to take home. I'd rate this as a must do event for foodies visiting New Orleans. There are several class menus to choose from.

We took a vegetarian version of the cooking class. Got to make Gumbo, Corn Maque Choux, and Bread Pudding with a salted praline sauce. Our instructor Mark is an experienced chef and great teacher! We had a small group just 4. I’m an experienced home cook, but picked up a bunch of tips and tricks for getting a really good bread pudding and gumbo meal together. The corn thing was very very good. I would highly recommend the experience. We left smarter and full of really good food!

My husband and I love to cook, and often attempt Cajun and creole food because we love visiting New Orleans. But we could never get a proper roux going, always too intimidated! The roux class with chef David was awesome, and we are much more confident now. We got some tips on knife skills, a great rundown of the history of the area, talked food-nerd stuff, and helped make (and eat) some fantastic dishes. We are so glad we decided to take the class and have been recommending to friends and family!

A local teaches you how his grandma cooked. I am already using his knife tips. I learned to make a dark roux for shrimp etoufee. We made jambalaya with authentic andouille sausage. For dessert, he prepared banana foster flambe.
I can now make my own etouffe at home. He was a patient helpful teacher and an excellent chef.

Attended on 3/18/24 with Chef Raymond and had a wonderful experience. Was one of the most fun and educational activities we've done during several vacations in NO. Don't let the price deter you, it's worth every penny.

100% recommend. This was a great experience for the family. Clean, Professional, well appointed teaching kitchen. The staff was knowledgeable and friendly. They discussed the history of the food, the how and whys of cajun cooking. David was the single best cooking teacher I have ever seen.
