This stop on the Paso Robles wine promenade is a cool stop. Two wineries and a distillery. These folks are really into it. They are raising goats for cheese which they are feeding the grape by-products to in order to affect the flavor of the cheese. Sort of the same principle Waygu beef is based on. In addition, their spirits are all made with grapes. Gin, vodka, lemon-cello. A dark spirit and an actual bourbon. Sort of a Shuhari of grapes and things associated with them.

Lovely visit to taste both the wines and spirits. Great tasting with Christina who was extremely knowledgeable and welcoming. Nice garden too!

Villicana Winery is amazing. Its absolutely beautiful and off the beaten path. The wines were wonderful and Victoria and Evan were great hosts. They were kind and knowledgable and really took an interest in making our experience a positive one. I love that if you buy two bottles the tasting fee is waived and that some of the money for the rose which was spectacular goes to a cancer charity. It is so quiet and peaceful there and they even have a distillery next door called RE:Find. I will write a separate review of that but you can do a tasting of spirits as well that they use grapes to make. All and all a lovely visit and a great stop on our wine tasting travels.

I don’t drink alcohol so most tasting room visits (with my wife) are wasted on me. I’m mostly looking out for pretty surroundings and interesting architecture and design.

Villicana, and particularly Re:Find Distillery, ticked those boxes, and had a very friendly, welcoming tasting room host (who's name I regret I forget to ask) who, as well as (I believe) giving my wife more tastings than she might otherwise have done, gave us a really interesting ‘tour’ of the distillery and told us all about the history.

Great visit.

Although the wines at this winery are fine products, I was more interested in the spirits, made from leftover grape juice, that involves a method , called Saignee.
This winemaking process involves bleeding off a portion of red wine after only a short period of time, and contact of the juice with the grape skins. Because the colour of red wine is derived from pigments in the grape skins, the resulting juice is a light or bright pink not red. This process is how many rose wines are made, the only exception being Champagne where rose may also be made by blending red and white wines before the secondary fermentation in bottle, although for still rose wines it is believed that the best wines are made by the saignee method. But in many cases the juice, which has been bled, is wasted, really.
Don't get me started on wasted food.
Well, these guys take the bled juice and run it through a distiller to make Vodka, Gin and Cucumber Vodka, all three available for tasting, during my visit. In addition they make Whisky, which I did not try, yet.
I general vodkas are clear spirits without distinct flavor, I found this Vodka to be pleasant, but edgy.
The Gin has nice juniper-berry and herbal notes, it would make a tasty gin tonic.
The unusual cucumber Vodka was my favorite. Its bright, fresh taste would make it the perfect addition to a holiday meal, somewhere between the main course and the salad.
The drive to RE:FIND takes one through the beautiful wine growing region west of Paso Robles. Well worth a drive.

Loved our visit here. The staff were fabulous, We bought wine and then went to the distillery and bought there. So glad that a local recommended it.

Paso Robles is full of great wineries so it was quite a treat to find a distillery that actually sold their bottles on site. They have two options to taste a neutral vodka or botanical gin. Typically I do not like liquor at room temperature, I prefer mine ice cold but the samples were super smooth. I am a vodka snob so find another vodka that goes down so easy made my experience even better. We ended up joining the distillery club which ships two bottles at a time but allows you to mix n match all vodka, all gin or one of each. Even if you are out wine tasting this is a must stop on your tasting adventures!!

One of the nicest wineries around, in my opinion. Buy a bottle of wine and sit outside and soak in the amazing view. Set high on a hill, a perfect spot for a picnic... oh.. and the wine is really great also..! Not to be missed.
