I read previous reviews and I think a lot of them are extremely unfair. Tamnak Lao offers two kinds of classes - full day class with the visit to the market and short evening class. My opinions are well reflected by those who were less than impressed by the evening cookery class. In short, you get a very fast demonstration of 5 dishes followed by the opportunity to make 2 dishes (if a couple) and eat them. I took the Lao Cuisine cooking classes, evening class. In two hours we managed to see the chef cooking 5 dishes, after tasting all of them I decided to cook one. This was by far the worst cooking class I've ever had.. And I've had quite a few in Southeast Asia this past year. Like others have said already: rushed and poor instructions by robotic teachers and no help or feedback on your own cooking.
