We drove from Mactan in the car (almost 2 hours due to heavy traffic) just to try the Lechon we had heard so much about. I'll admit we were a little disappointed with the Lechon and I'm sure you can find better if you venture further into Carcar City.
However, the rest of the market is great with a wide selection of fresh meat and vegetables at prices far cheaper than Cebu City.
It's worth a visit if you're passing by but I wouldn't drive that far again just for the market.

After the whale shark encounter, our guide tool us to Carcar Public Market for lunch. It has been said many times that this is where the best lechon (roast pig) can be found. I couldn't agree more. Indeed, the lechon in Carcar is the tastiest, yummiest, and the best lechon ever! This is not your typical restaurant. You won't see fancy lights or hear good music. The best lechon is in Carcar public market. Yes, inside a market! :)
So when you visit the whale sharks, it's a must to eat lunch in the market and have the bestest best roast pig ever! ;)

Go inside the Pubic market or ask the local where the Lechon sellers are. We tried each of the lechon sellers until such time we found one that we like the taste. We order 2 kilos for the 5 of us. We had left overs we brought home to Bacolod. I don't care for puso much so we sat down in one of karenderia to get rice, soda and water to go with the meal. The karinderia is to the side of the lechon vendors. We paid P280.00 per kilo. OMG here in Bacolod it cost P500. per kilo. The sauce is not like mang tomas. When they slice the roast pig open, the liquid out of the belly of the roast pig becomes the sauce. Kinda salty, be careful. If you are fussy on where and how to eat, bring it home. There is a park nearby, you can get plastic utensils and plate are nearby grocery store.

In the rotonda or roundabout, the famous chicharon. We tasted the chicharon from each stall until we found Luis chicaron; myrna's ampao and doding macarons. These becomes our pasalubong for my mom back in Bacolod.
We really enjoyed the Lechon it was divine, and the other goodies we brought home, my mom loved it.

This doesnt apply to all vendors but when we bought lechon there we were deceived. The one we ordered was swapped with an order filled with bones and really bad parts. We were shocked when we opened our package at home and we couldnt do a thing about it since we were miles away. The vendors were very good con artists, at first they would ask you the part you liked, give you a free taste and make you happy for a while then they were really fast and instead of giving you the part you wanted, you get the reject ones. My god, i really wish these people would reap what they sow... Feeding their children with scammed money and lies. No wonder theyre still lechon vendors. If youre after good lechon, you can buy really good ones in mactan / cebu city without going to this place and risk getting scammed.

If you want a different experience and try the lechon pride of Carcar, try this:
There is an area of lechon sellers at the back of the market. They offer free taste. We bought 1 kilo at 280 pesos. There are puso (rice) sellers walking around the area too. You may ask for small plastic bags that you will use for eating.
Go to a nearby park, set the table, wrap your hand with a plastic bag and start eating. Get pasalubong near the market, buy the famous Mat-Mat chicharon and get a taste of the pride of Carcar.

Want to savour the best of Lechon Cebu? One must visit Carcar Public market and experience tasting the best of Cebu Lechon. Place may not be that attractive (as it is a public market), but tasting the newly cooked Cebu lechon is great! The experience is heaven! The price is way below as compared to the city prices! And the chicharon? Wow! Taste and crispiness of the cebu chicharon is fantastic! Visit to Cebu will not complete without visiting Carcar!

Lechon (whole roast pork): used to be the best lechon ever to me before but after my second visit, not anymore. Fore some reason the lechon is tougher now. Hope this lower quality of lechon is one of. And price also increased from 280 pesos to 350 :(
Puso: still the yummy rice cooked in coconut leaves. Best paired with chicharon.
Chicharon (pork crackling): still very very good. Very crunchy and tasty. Basically it is eat all the chicharon your heart can take. So be very careful.
TIP: when you are not into the healthy lechon (meaning all meat not fat) make sure you tell the person who chops the lechon not to add the very lean meat part (usually the pork hind).
For me the perfect lechon is 70% lean pork, 25% pork fat and 5% crispy skin :)

I am from Iloilo and currently works in Manila and have tasted so many lechon in my 30+ yrs of existence and I must say Carcar lechon is the best! I will never eat lechon the same way again! Once you arrive in their market get inside and ask where the lechons are, Cebuanos are extra friendly so don't hesitate to ask for help. The price of the lechon is 350/kilo. Super cheap! Lechon vendors will give a free taste of their lechon and its up to who would you choose. You can eat in the carenderia beside the lechons just order one viand from them. The meat oftheir lechon is so succulent and tasty unlike other lechons, bland and gummy. OMG I will never forget the feeling when angels came down from heaven when I had my first bite of the famous Carcar lechon. Divine!

Eat freshly cooked lechon at P400/kilo. Go lechon sampling from one vendor to the next and pick the best one. You can also enjoy it right there and then with their partner food stalls. No utensils here. Just order rice, drinks and maybe extra viands.
The place is generally clean, odor and flies free for a public market.

What time do they start selling lechon? We are arriving at Cebu City at around 4AM and if it takes around 2 hours to get to Carcar, then we will probably be there around 7AM. Will lechon be available at that time?
Written 30 March 2016
So to answer my question, yes! There are alreafy a lot of lechon even on the wee hours of the morning :)
