We had a wonderful trip to Italy - one week in Rome and one week at The Awaiting Table castle course. Our program began in the historical center of Lecce at the "home" of The Awaiting Table where we ate lunch and were introduced to the mediterranean cuisine of the Salento. We traveled by van to the castle in Spongano... More

Thanks for the kind words but we actually WERE in that New York Times article you mentioned (we spent three days with the journalist last winter). We hope you can make it back soon. In the meantime we've been in the Los Angelos Times and several European magazines and newspapers. Folks are taking notice of Puglia and the Salento. It... More

I have just returned from my second visit to The Awaiting Table Cookery School in the Puglia region of Italy. My week there was everything I remembered it to be and more. Sylvestro and his amazing staff take great care to make sure that the guests are comfortable and happy. I was lucky enough to attend the school at the... More

It's great to see the staff's faces light up when I tell them we have a returning student. It's the ultimate compliment. If you do want to come back for the 3rd trip, consider coming to our wine course, which is also at the castle. The wine of the entire south, one of the fascinating subjects I can think of. More

I'm just back from my 4th visit (taking a group of guests) to the Awaiting Table, and I'm already scheduling my next trip there. I'm never disappointed by the school which provides hands on, authentic cooking lessons based on the food and wine of the Salento in Puglia. The staff go out of their way to make sure guests are... This past Fall I had the opportunity to revisit the beautiful city of Lecce and spend two weeks cooking at The Awaiting Table Cookery School. The first week was in Lecce followed by a week at the Castle in Spongano. I had so much fun and the weeks flew by! In Lecce, each day began with espresso and pastry at... More

It's rare that anyone books two weeks back to back with us, one in Lecce, and then one at the castle. It's actually a smart way of going about it though, as I think one would really get a sense of the core and periphery dynamics of an European capitol, and the smaller cities around it that contribute so much.... I completed a week of culinary instruction with the Awaiting Table Cooking School. The week was spent at "The Castle" in the small town of Spongano and the overall experience was fantastic. The instruction was excellent. The food and wine were plentiful and delicious. The course met my expectations because it was well organized and because it was rooted in... More

I already had one week of Awaiting Table under my belt, but this past summer I could no longer control my longing for southern Italy and decided to sign up for a second session at the school. After all, my orecchiette technique still left something to be desired. I selected the San Martino celebration at the Castle in Spongano and... More

After much research on cooking schools in Italy, I decided to give Awaiting Table a try since it seemed to incorporate many of the elements I was looking for; a definitive local flavour, visits to local food markets and an educational component on food, oils and wines. It did not disappoint on any level. First of all, Lecce, where Awaiting... More

Yes, great to have you! It's always nice to be able to talk food with those in the industry! Thank you for that! And regarding 'spaghetti', I think you mean that egg pasta doesn't play a part in Southern Italian pasta traditions, not historically. Still, your enthusiasm for Southern Italian food comes across my computer screen! Hope to have you... More
