Hi freckleslee, you can visit the cheese market without a guide. Check the dates, because it is only in Summer and on Friday morning. I don't know any tour operators. I travel without them. There is a train between Amsterdam... More

Every Friday between 10am and 1pm, just remember to get there early as it gets insanely busy.
