Well, this is definitely one sight that you would not ordinarily see in a city centre. The Bisschopsmolen (Bishop's Mill) has been around for close to 1,000 years, dating back to the 11th century and is the oldest still-working water mill in the Netherlands. Located in the Jeker quarter within a short walk from the Basilica of Our Lady, the mill also houses a bakery and a small eatery. Although the eatery was closed when I visited. I still managed to view the mill's water wheel by following the alleyway to the back of the building. We visited Maastricht as a tour group from our Scenic River Cruise . We had a local guide that told us about the history and the sights .
This water mill is pretty & part of a local bakery, the city was was lovely, lots of beautiful buildings, leafy squares with outdoor restaurants, very different from my expectations.
Visit if you can & there are some very nice shops , luckily we visited early on a Sunday but apparently some open around midday.

I did a pie workshop yesterday with my husband.
I thought we had booked a pie workshop, but it was more of a history lesson!
We had to hear a lot about the history of Maastricht and the origins of the Bisschopsmolen, but that was not what we came for!
We wanted to know how we could bake a Limburg pie at home, but we barely got any information about that.
The dough was already ready..., that's not the case at home either, and in 20 minutes we had to quickly put the ready-made dough into the mold and the fruit was also ready.
All in all a travesty, this was certainly not a pie workshop but a history lesson!
The whole group agreed with me, but as a real herd of people, no one dared to say anything.
Certainly NOT conceivable for repetition!
A waste of €30!

I went there with my parents because I thought it would be nice since the place is cute and the pie looks amazing. Once there they were rude, not cleaning the table and ignoring us. Then, we ordered 3 slides. My dad wanted the one with cherry. Surprise for him, it was full of pits. Perfect to break one tooth.

The place is definitely iconic and the staff was nice, but the vegan options were a bit lacking. Even though they had four vegan pie options, they only had one vegan option for the breads (with toppings) and they had no oat milk for the coffee! The pies were good but the breads, quite average.

This is a very old mill, dating back the 7th century. It might not be much to see, but it is nice to experience a different type of bakery that in it's backyard has this old beauty. The current name of the mill is linked to the Bishop of Liege to whom the mill belonged in 1099 and since then the name stands with the mill. Go to the backyard and take some great picture with the windmill and then follow the back route and discover the old city of Maastricht!

I wanna make clear that this is not a review, but a warning. I visited this bakery because trip advisor tagged this as gluten free. Because of all the people pretending to have this disease and just for my own sake, I always ask in advance if the products are somehow isolated from the rest. Apparently this bakery is meant for people that for whatever reason avoid gluten, but absolutely NOT for coeliac patients. All the desserts are prepared in the same machines, counters and containers that the regular desserts are prepared, which are ergo covered in wheat flour. Ultimately I can't review the food because I wasn't able to actually eat anything, but if you are in the same situation, avoid this bakery and ignore the gluten free tag! Cheers

I went here for a breakfast! Amazing what kind of quality bread they make! Not that cheap foam-bread from the supermarket! Next to the cafeteria there is the bakeryshop where you can by bread to take home with you!

This is a very old waterwheel which still functions to grind flour for a real bakery. The mill is only one room with some plaques to describe how the mill works, but I think it is worth visiting if you are in the area. It is free to visit and only takes 5-15 minutes.
Then visit the cafe! They are known for their pie. We tried cherry and it was very good.
