About
You will start your day in the historic centre at Campo di Fiori open market in Rome. One of our professional chefs will take you on a shopping tour where together you will choose only the best in-season ingredients, and decide the menu of the day. The lesson consists of 5 hours of fun instruction and, of course, the enjoyment of the mouth-watering cuisine. More than just the recipes the class is very much about the ‘why’ and ‘how’ of the cooking process. In this way, you will have a deeper knowledge to take home with you. Cooking methods are taught along with creative presentation of the plates. Hands-on practise is an important component of ‘Chef in a Day’. You will be taking part in making an antipasto, 3 different pastas from scratch (one long, one short, and one stuffed), each accompanied by exquisite sauces. The lesson continues with a traditional second course of meat/fish, (vegetarian optional) and you will end this refined cooking experience with a delicious dessert.

Would give zero stars if I could. After reading past reviews about the chefs tendency to do no-warning cancellations we were reluctant to book, however we decided to give a try and booked about a month in advance. Shortly after connecting with the Chef on WhattsApp - we were alerted that the class we booked was full (Which makes no sense as we were allowed to book it) and offered to upgrade our location to a unique villa in the countryside (seen in some pics on here - casale alessandri) and we agreeably were extremely excited! He let us know that for the time being we were the only two guests scheduled for the Villa. Despite all this, we were ensured by the chef himself our class would not be cancelled due to low numbers. Literally less than a week later with no communication - trip advisor alerted us that it had been cancelled. NOT EVEN THE CHEF - who we had been speaking with directly told us it would be cancelled. I am one of the most understanding people in the world - I get it things happen, but to not be given any notice after being told our class wouldn’t be cancelled seems a bit unprofessional. On top of that - the Chef was very rude when he found my friends review - was calling us names, and being insulting instead of just having good customer service. Save your time and money and book somewhere else. And to the Chef, to demand respect you must give it. Better communication and customer service etiquette would do you justice. A companies dependability when booking trips and experiences like this is of the upmost importance and yours could use improvement.

Chef moved location to further location. Then cancelled the class after he had assured that he wouldn’t regardless of change of location. Not professional. Wouldn’t recommend.

We had a lot of cooking class around all the World but this has been the best cooking class we’ve ever had. The Chef was excellent and followed us in every step. Now I am trying to find ingredients with the same quality of those used during the class.

The day started with meeting our Chef and his team at a predetermined location, which was easy to find. He introduced himself and his team (all were in Chef uniforms), and we were off to a nearby Market, which in itself was a nice sight.

We discussed the many different options of foods, and what we would purchase, and the location of which the foods came from. All so very interesting and informative, with some minor history. After the market, we visited a butcher, and a cheese/wine store to gather all of our ingredients.

Afterwards was a moderate walk (maybe 10 minutes) to the kitchen, which was rather well organized, and overall great atmosphere. Small warning, as the place appears to have WiFi, however, my cell phone signal wasn't great (if you prefer to use your phone immediately - take pics, upload to social media, etc... otherwise, you can just do this after the class).

Chef Fabrizio and his crew then start an excellent class on how to prepare everything, while of course, letting all the students do most everything hands on. Was a great experience. The foods were all impressive and delicious, and really well presented! Totally, overall, we had 5 courses, with a choice of a red or white wine to accompany the meal.

The overall experience was amazing and authentic. I would definitely like to do again, and was well worth it. You will definitely leave the class fully fed, better educated, and most likely with a better understanding of how to use some of the techniques shown in your own kitchen.

Everything was kept interesting and delicious from start to finish.

My family and I had a great time taking our cooking class with Chef Federico. He is very knowledgable and funny and knows how to keep everyone's attention. The first pasta we made and ate was quite literally one of the best pastas I have ever eaten in my entire life. And I am Italian!My husband, who does not cook at all, really enjoyed himself and was actually one of the best gnocchi makers in the class. :)

I would definitely recommend this class. One piece of advice, you don't eat until the end of the class, so make sure you have breakfast if you are doing the morning class, bc you probably won't sit down and eat until around 2. It was nice breaking bread, so to speak, with the other members of the class and sitting down to a delicious meal we helped create.

We had this class booked and paid for months prior to our arrival in Rome. The day before our class we received an email from the chef that our class was cancelled because a party of 6 that was booked for the same class had cancelled. The chef said our group (4) was not big enough to conduct the class. In other words, he won't make enough money so, sorry, your vacation experience is ruined. My family is devastated as we are great lovers of Italian food and life-long home cooks of Italian food. To say this cancellation is irresponsible is a huge understatement. How could someone have the callousness to ruin a family's vacation because of his selfish need to make enough money to show up? If only one person shows up, a professional would do the course anyway. If you book this class, don't plan on it actually being conducted. What a farce. I will never, ever, book through Trip Advisor again.

Disrespectful for other jobs. You (and your family for sure) are a classic example of ignorant travelers. I’m sure you never traveled before. Since our first messages I understood how poor of intelligence you are. I already asked you and I do it again: do you think you are so special to deserve the class even if we loose money? The dishes were nice enough, and the space was good for a cooking class. We started in the market – which was closed that day so we missed out on that part of the class. However, we understood that’s an unforeseen circumstance and we went to other shops to learn how the chef chose ingredients.

The menu was good, but the chef was at times incredibly rude and abrasive (benchmarking to local norms). One couple wasn’t able to join our class, so he invited his friends to join the meal in their stead – they just happened to be a couple that runs tour groups and were terribly condescending. In addition, the chef was continuously trying to sell us his olive oil. Most egregious, the chef asked us to leave the kitchen, and then berated us about not watching him plate. It was incredibly unprofessional and so uncomfortable – we walked out with another family and our consensus was that the chef was an [insert expletive here]. It completely ruined the day.

There are many cooking classed in Rome – for this one, the chef’s total unawareness of the situation and completely inappropriate behavior means I would never recommend this to anyone.

And here we have a typical Karen . Been disrespectful during the whole class . Not interested at all, not listening, chatting and drinking the whole time. I called you every time I was doing a preparation but you kept doing your own business. And then you complained about missing steps and explanations? I had enough with you and clearly said that that was the first time in 10 years of teaching that I had a whole family sitting and chatting with no care about the lesson. Of course you felt guilty and you decide to leave (I never asked you to leave) in a beautiful walk of shame. Enjoy your sad life Karen!

We traveled to Rome from the United States and one of the activities on our very hectic itinerary was this cooking class. We read and understood the cancellation policy and that the class could potentially be canceled if not enough participants booked. However, we were extremely disappointed to receive an email only two hours prior to the start of the class informing us that our class was cancelled. We were given no reason for the cancellation in the email. When traveling internationally, our time is valuable and should be respected as such. We are now left with a day empty of plans and not enough time to schedule anything in its place. The timeframe of and lack of details in the communication is unacceptable.

The chef had a car accident on the way from Umbria to Rome for your cooking class at 6:00am We immediately canceled trying to give you some time to organize yourself. We are sorry for your “empty day “ but we are more worried for the chef’s health.

We did our first cooking class for our anniversary back in Sept 2018 with Chef Federico Alessandri in Rome. Fair to say that this was our best cooking class and experience so far. Chef Federico starts with the group on the market where you buy all the fresh ingredients for the ~5h cooking class. Accompanied by plenty of wine you get the authentic Italian cooking experience. Starting with different handmade pastas, tomato sauce cooked for 3h to artsy/fine plating you learn quite a lot in a fun and entertaining way with lots of laughter. Federico has plenty of stories to tell and you feel that he is enjoying to share his knowledge with the class students. Expect to have a great day and authentic experience. Course is worth every EUR as you will def leave with a full belly... No dinner required on that day!

This October we had the pleasure to get a sneak peak of the multi-day cooking class with accommodation in Umbria at Casale Alessandri. During the first cooking class Chef Federico was explaining how he wanted to extend the course and use the medieval family castle in Umbria to offer multi-day Italian cooking classes.
In the 6 day stay we enjoyed about 36 different courses (breakfasts not included)!! This is heaven for anybody remotely interested in culinary or just eating! During the 6 day stay we had 3 cooking classes, 2 Chefs Fine Dining Dinners and 4 Rustic Dinners which where still 3 course dinners and not less impressive and tasty. More cooking classes give you the possibility to learn even more about your favorite Italian dishes. You learn more pasta styles, various styles of sauces and new dishes
Federico and his wife Louise are both lovely hosts and make sure that you have the most relaxed stay. The various rooms off the medieval family castle are lovely renovated, decorated and clean. The property is nicely redone with own olive trees and a great infinity pool. Casale Alessandri is located in the heart of Umbria which makes it a great start point to visit Perugia, Assisi and the surrounding little towns. Federico and Louise gave us plenty of suggestions for day trips.

Definitely will come back in summer to enjoy the pool and more cooking!

Thoroughly enjoyed this experience - from the market tour, all the way to cooking and eating all the meals we helped prepare. Chef Alessandri was professional and entertaining. Learning the science behind some cooking techniques was just incredible. His sous chefs were efficient and very fluid with their work. All the meals we cooked were so delicious! I strongly recommend this experience to anyone visiting Italy.
