Worth spending time to walk around the city walls to give you a good idea of the city size and history. Recommend going to Walmgate Bar which is the only gate that still has the Barbican entry.

Worth a stroll even if you only do a little bit of the wall. We were lucky as we did this late afternoon, with the afternoon sun lighting the beautiful minister.

This has to be one of the star attractions of York. But constant attention is required since people keep stopping for photos and they're not always considerate to pull to the side before getting their cameras/smartphones out to take the shots Hence my motorway reference....More

Interesting to follow the walls around as they weave around central York. The parts near York Minster wee very busy. Much quieter and pleasant away from there. Would time future walk to be early or late in the day around York Minster.

I am a tourist, and so cannot answer your question but York is a highly organised destination and so would be suprised if a German speaking tour was not available

Depends on where you get on (and how often you stop for photo ops), but I'd say not more than an hour.
