Went on the Kent and East Sussex railway there, quite expensive £58 for five of us but really enjoyable way to travel. Castle was fabulous, good trail for the children. Guides were informative and friendly towards the children.

On the grounds is on-lead only, but there is plenty of good tracks and bins for well, waste.. As for inside, as stated a, a tether point is outside of the actual castle.

You need to check with the National Trust - think how embarrassing it could be if you just turned up! I guess it also depends on exactly how and where you wish to do this and wheter you are an amateur or a professional... More
