It's well worth the trip to see this chateau, which has been extensively preserved. The Musicians hall, chapel and dining room inside the grand tower have real atmosphere. It's a shame there's not more explanation of Cathar history available onsite.

Surprisingly, there is not only a nice restaurant in Puivert, but it is Afghani. They offer vegetarian and meat options, and the food is delicious. It is called Le Pamir, and it is reviewed on Tripadvisor.
