Because of a strike, my visit to the market was shorter but worth it. We learned to make Nikkei-style tiraditos (Peruvian-Japanese fusion, think sashimi with amazing sauces), and Chef Hector and his partner exceeded expectations. After picking out fresh fish at the market, we headed to a terrace overlooking Inca ruins for a step-by-step lesson in sauces and dishes. Thank you for sharing your secret recipes! We’re already making them at home, along with the Chilcano cocktail Ricardo taught us—Pisco, bitters, ginger soda, and fresh ginger juice. The tour to the market was informative and we really enjoyed getting to see all the wonderful fresh products. Then the time at our cooking class was so much fun and we learned a lot! We really were happy with how they took the time to not only show us how to make ceviche and Pisco sours but guided us through the process to learn the steps and try it on our own as well. The friendly nature of Chef Hector and Chef Martin made this experience extra special and we really felt by the end that we had made some new friends in Lima. When I found out chef Hector was teaching this class and was previously at Maido, one of my favorite restaurants in Lima, my friends and I signed up! It started off with a morning at the market where Chef Hector gave us some brief information on the history of Peru and how the local foods came to be out of socioeconomic times, immigration and Peruvian 'innovation'. We walked through the market and learnt about what to look out for when buying fish for ceviche, secret spots for great cheese at great prices, and lots of other tips! At the kitchen, we learnt all the items on the menu but the best parts were just learning secret tips from someone who has worked at such high caliber restaurant kitchens! The team is so down to earth and very helpful when you're doing the hands-on portions of the class and they're all fun to be with. Throw in a couple of Pisco sours in there, and a grand meal at the end of the class and you have yourself an amazing experience of a great time in Lima!Written 19 May 2024

The actual cooking school is on a rooftop across from a 2,000 year old pre Inca megalith in the process of being uncovered. Hector was a fabulous instructor, passionate about Peruvian cooking and all things Peruvian. The class was informative and a genuine pleasure. We’ve taken cooking classes in Italy, Thailand, Singapore, and India, and our class with Chef Hector was among the best. It was a hands-on experience that kept us busy for several hours. One of us is a very competent home cook, and the other is a klutz in the kitchen, but both of us learned a lot and thoroughly enjoyed ourselves. Chef Hector is the real deal, a chef who has worked in many parts of the world, including at one of Peru’s leading restaurants. His teaching skills are exceptional, he is completely fluent in English, and he has a great sense of humor. We acquired a number of useful skills and techniques in the course of preparing several dishes. The class flew by and our classmates and we enjoyed a magnificent feast at the end. Chef Hector also follows up with useful emails for us to reference back home. We heartily recommend a class with Chef Hector to anyone interested in learning more about preparing Peruvian food while having fun in Lima.Written 29 April 2024

We began before sunrise shopping at the fish market, where Chef Hector hand selected ingredients for our cooking class. Our class was held at his workshop, where he and his amazing team taught us how to create a delicious Peruvian meal. We had a cooking experience that we will never forget! Hector not only knows his history and geography and all about the wonderful fruit and vegetables of Peru, he’s a passionate, fun and masterful chef. The Cooking Class was on the top floor of an old building in Miraflores. We had three separate dishes and learn how to make three different sauces. I’ve never had so much fun slicing fish for ceviche! Along with Papas and Lomo Saltado we also learned how to make two different kinds of Pisco Sour. Omg, where to begin. Chef Hector, Deano and team were just amazing! This experience blew our mind and exceeded all of our expectations.
We coordinated this with Hector a bit last minute on our last day in Peru and he was so welcoming, despite it being a major holiday weekend. From the moment we arrived till the last pisco sip we took - The team took great care of us and went above & beyond to teach us each step of making great civeche (freshest I’ve ever had) and amazing pisco from scratch.
The added bonus was Chef Hector going out of his way to teach us how to make lomo saltado after we shared that we originally were torn between a civiche class or salatdo class. The fact that he had his team go out of the way to pick up some fresh meat from the butcher down the street just to teach us every step of making lomo saltado (after our original class had ended), was just mind blowing.
Don’t think twice, this is an experience you won’t forget and it was a perfect ending to our two week Peru trip - But we’ll be back!

We had an amazing experience with Hector. He picked us up from our hotel in the morning. Then we hat a nice walk through the markets of Lima to buy all the ingredients for our menu. (including fish, vegetables, meat, rare herbs, fruit, you can find anything there)
Afterwards Hector brought us to his outdoor kitchen and explained all the steps for preparing traditional peruvian food. Even my clumsy uncle managed to understand hectors instructions. We prepared a 3 course menu including ceviche & scallops and mixed pisco sours.
Everything was accompanied by interesting talks about peruvian culture and hector gave us a short narration of his cooking experiences in the past.
All in all it was awesome and i would recommend everyone to book a course with Hector.

This was such an amazing experience. Hector and his crew were prompt, informative, and gave us such a great overview of Peruvian cuisine! It was great going to the market and learning about each ingredient as well. Highly recommend 🤩🤩🤩

He was such a great chef, forcoming and interested in us, our cooking skills and funny at the same time. The so called ceviche was tasty and fresh, we ate it once more in Cusco but there is no comparison to what we tried here. 100% good job!

I had such an amazing afternoon / evening with the guys learning all about making the yummiest Peruvian food and Pisco Sours. The market tour beforehand was an informative trip to learn all about the fruits and vegetables that they use in their cooking and to grab some things for later.

Truly a unique experience getting to learn how to make a traditional Peruvian meal and cocktail!
Hector and Dino were amazing! They were very knowledgeable, welcoming, and even gave us great recommendations for how to spend our time in Miraflores afterwards. Not to mention the food we had cooked together was delicious!
If you want to learn about the culture, love good food, and want to spend time with great locals- this is the tour for you!

Thanks to Hector for ensuring we got to the class by sending a driver to the airport to meet us. We enjoyed spending several hours with Josue and Adrian learning cooking skills and techniques, tasting new foods, and discovering new ingredients. It was a great day. Plus we met some wonderful people along the way. We can't wait to recreate the dishes at home and share with our friends. Thanks again to the whole gang for an enjoyable time!

My wife & I really enjoyed this class. We learnt how to make ceviche, causa, aji de gallina and Pisco Sour as well as a trip to the market to by the ingredients. Great food and lots of fun. There were just 4 students so lots of personal attention. Would highly recommend.
