Begin the day with pickup at your Bangkok hotel, then travel to Sampran Riverside in an air-conditioned minivan. Cross the Tachine River by boat to reach the farm, which is certified organic by IFOAM, EU, and USDA standards. Learn about the most important vegetables and herbs in Thai cooking while exploring the 70-acre (28-ha.) farm, then pick ingredients for your cooking class. When you've gathered enough for the day's meal, taste seasonal fresh fruits and handmade teas made with herbs locally.
Continue to the cooking class site, an antique Thai house set in an organic herb garden. Work alongside a local chef as you prepare four classic dishes: learn to make raw papaya salad, Thai grilled chicken, lemongrass soup with prawns, and khanom pang na moo, minced pork on toast. Sit down to enjoy your own cooking, along with three additional dishes prepared by the chef: sample stir-fried morning glory with chili and garlic, massaman curry, and cashew chicken along with jasmine rice and coffee or tea.
After lunch, drive to a nearby cultural village to see arts and crafts demonstrations, including silk production, umbrella painting, weaving, pottery, martial arts, farming, and vegetable carving. Explore the village, then make the return trip to Bangkok, ending the day with drop-off at your hotel.
