Sevenhill Cellars is a revered site of sacramental wine and spiritual character that was built by the society of Jesuits in 1851. Hear their stories, inspect their 160-year-old vines and, of course, we’ll have a taste of their world-famous wines, including an immersive tour of the church crypt, grounds and museum.

Stop At: John Horrocks Trail, Penwortham, Clare, South Australia Australia

Visiting the grave of Clare’s first settler John Horrocks, and the landmark tree under which he first camped and hear the story of Harry the Camel who was responsible for the demise of Horrocks

Stop At: Reillys Wines Vineyard Walk, Hill St, Mintaro, South Australia 5415 Australia

Leaving Sevenhill we’ll travel on scenic back roads with access to private property, through vineyards and farmland. Stunning views of Polish Hill River and beyond. There’s no shortage of unique photo opportunities.

We travel into the historic township of Mintaro. Settled and established around 1847 as an overnight stop for Ox Drays carting the rich ore of the Burra Mines to Port Wakefield, the heritage listed town is known for its world class slate. It’s also home to the first Jesuit church built in Australia.

You will have lunch at Reillys Cellar Door Restaurant.

Stop At: Martindale Hall Heritage Museum, 1 Manoora Rd, Mintaro, South Australia 5415 Australia

Refreshed from a winery lunch we meander out of town to the jewel in the Mid North of South Australia, Martindale Hall. A journey back in time reliving the lifestyles of wealthy pastoralists. A fully guided tour of this Georgian-style mansion built in 1879 by country squire Edward Bowman. He surrounded his home with a polo ground, a cricket pitch, a racecourse and a boating lake, entertaining South Australian society. Bowman, fallen victim to droughts and debt sold the property to William Mortlock in 1891. Martindale was a wedding present for his wife, Rosie.

Martindale Hall was featured in the classic Australian film, Picnic at Hanging Rock.

Stop At: Spring Gully Scenic Drive 18, Auburn, South Australia Australia

We then travel the backroads from Mintaro to the picturesque Skillogalee Valley, passing sprawling Hughes Park on our way to the Skillogalee Restaurant for afternoon tea.

Local knowledge, superb lunch and fantastic wines.
We booked Mr Willson for a full day tour to get the full Clare experience. Being a local, Dave's knowledge of the area and history was excellent. He took us to Seven Hills wines initally where we learnt about how the valley started and sampled some quality wines. Our tour included several other wineries and Pikes Winery where we tasted beer and wine all of high quality. Lunch at Paulett Wines was brilliant. Very tasty and with views over the valley. A highlight for me was the welcome we received at each venue. We were made to feel like welcome guests, rather than the next customer. We asked Dave to include more history, and he was happy to oblige. Highly recommended.

Highly recommend. Exceeded our expectations on every level
Mr Willson quickly assessed our areas of interest across heritage and viticulture and adapted the tour to suit. Divine lunch and wonderful wines while we learned about the local history and different wine areas of the Clare Valley. Lots of fun and light hearted banter. We were going to do the e-bike version but am sure we would not have had such a fun day. Highly recommend.10 stars.

Wine and history - a perfect blend
Mr Willson shared a magic day with us learning about the history of the Clare Valley while tasting boutique wines. We LOVED all the yarns, all true, and genuinely relaxed while seeing the essence of the beautiful green valleys. Fantastic tour, great guide, great wines
We had the most awesome day. Dave picked us up and we happened to be the only two people so we ended up with a private tour. We visited wineries from big to small on a day that was tailored to what we wanted to do with a few surprises thrown in. Dave’s knowledge of the local history of all the places we visited or passed really added another dimension to our day. We tried some wonderful wines, heard some good (and bad) jokes and learned a lot about the history of the Clare Valley then finished the day at a secluded lookout that had amazing views. I would highly recommend this tour, and Dave, to anyone who wants to have a great day with more than (but including) great wine tastings.

Fantastic host
David is an extremely knowledgable local of Clare Valley. He is very punctual but at the same time very easy going and caring. We had him on 2 different days for our private wine tasting tours. He had an amazing days with him. He helped us to choose the best wineries/cellar door and restaurants. Because of his reputation we felt very welcomed at each cellar doors. He is very knowledgeable and personable and fun to be around and we highly recommend him and his service.

David picked my wife and I up from our B&B at Watervale on a misty July morning. We had been to most of wine regions in Australia over the years and were looking forward to sampling Clare Valley. We were not disappointed! Not only did we go to some great vineyards, sample beautiful wines and chat to the friendly winemakers, David gave us an excellent understanding of the region and the history, visiting the places where the early settlers established themselves. Fantastic Day - History and Wine
We picked this tour for a wine tour but we got far more than that. Dave told us about the history of the area and because I lived in Penwortham in Lancashire for 20 years he showed us around Penwortham SA and this was extremely interesting. The wineries were a good choice and the lunch was absolutely fantastic. Well done Dave - we had a fantastic day and highly recommend your tour to everyone.

Day Out with Dave
We had an awesome day out with Dave on his Clare UnCorked Tour. Dave shared the interesting history of the Clare Valley and is able to answer any questions you may have. He planned the day around what we wanted to do, see and taste and took us to some really wonderful wineries, we even got to meet and do a wine tasting with Justin Ardill of Reilly's, what a highlight! Daves character and personal approach made for a very fun day, I'm sure I was giddy from all the laughing not the wine!
