We stayed here as a family of four in mid August. A stone's throw from the tourist madness of Carcassonne, this chateau, also a working vineyard, is a slice of pure French country living: eccentric, spacious, atmospheric and utterly spell-binding. The children were convinced it was haunted and, frankly, would have been disappointed to be told otherwise.
There is a gym, sauna, swimming pool and tennis court which seemed hardly used by any other guests so we had them all to ourselves while everyone else was eduring the crush of tourists in Carcassonne.
We arrived on a Monday and to be fair the place felt a little unloved as the restaurant is closed and clearly most staff have a day off. But the next day, the place came to life and dinner on Tuesday night was a gastronomic tour de force!
As proprietor of a large historic B&B/hotel I get people postulating about the expense of staying without regard for the cost of keeping the place open. If you stay in a place like this you get what you pay for, a slice of something that is far beyond a bed for the night. Cavanac isn't cheap but it is worth every single centime.
Room Tip: Ask for rooms in the main tower of the chateau
