“A terrific experience all round.”

We booked in with our daughter and her (then) boyfriend for dinner and an overnight stay.
The setting is idyllic, the rooms comfortable (and great that each one is different). Dinner was staggeringly good, probably the best lamb we've ever eaten, cooked over a wood fire. Prefacing this was excellent and abundant foie gras, following it a selection of local cheeses. Wine flows (made on the property), a digestif and/or a tisane to finish make booking a room a wise decision. Hate to copy what you've suggested in the "title your review" but, yes, we did love it and we will go back.

“Exceptional property and a real experience”

Stayed for three nights and thoroughly enjoyed it. It is only minutes drive away from Carcassonne, minutes off the auto route.Cavanac is a small village which didn't appear to have anything going on there apart from the Chateau. Arrived on a Monday when the restaurant is closed and it felt like we were the only people there! Had the pool to ourselves. Went for a walk in the vineyards which stretch for miles and you can see up to the Pyrenees, very beautiful part of the world.
The rooms are huge - we were in Oiseau de Paradis and was very comfortable and had a private balcony.
Breakfast may appear expensive at 12 euros but had the best selection of all places we stayed at.
The real treat was the restaurant. We had the full 6 course 42 euro dinner one night , the next night we had shared a starter, two mains, two desserts, coffee and one bottle of wine was only 12 euros less than the night before. The a la carte menu is only available to hotel guests. The restaurant was busy both nights with non residents which shows how good it is.
All dishes were superb, of excellent quality, great service, the house wine was very good. Look at the website for the menu.
The only slight gripe would be that the free wifi was only valid for 4 hours at a time so had to go back to reception to get a new passcode!
Not cheapest place to stay but when weighed up against the quality of the service , the environment you are staying in and fantastic food it was worth every penny.

“Loved it”

Just loved this place. So relaxed, spacious, beautiful and way from hustle and bustle. Never stayed in a place like this before. Ensure you are there a night when the restaurant is open - def should eat there one night anyway.

“Our place for special occasions”

The rooms are all beautifully decorated and each have a name of a flower. Ours had a four poster bed and the drapes were so colourful and sumptious. The food was fantastic. You have a menu if you are staying and the value is great. The wine is from the vineyards of the chateau and it was so good we bought cases to take away with us. Our family were visiting from Singapore and they loved it too. Very very peaceful

“An extraordinary place”

We stayed here as a family of four in mid August. A stone's throw from the tourist madness of Carcassonne, this chateau, also a working vineyard, is a slice of pure French country living: eccentric, spacious, atmospheric and utterly spell-binding. The children were convinced it was haunted and, frankly, would have been disappointed to be told otherwise.
There is a gym, sauna, swimming pool and tennis court which seemed hardly used by any other guests so we had them all to ourselves while everyone else was eduring the crush of tourists in Carcassonne.
We arrived on a Monday and to be fair the place felt a little unloved as the restaurant is closed and clearly most staff have a day off. But the next day, the place came to life and dinner on Tuesday night was a gastronomic tour de force!
As proprietor of a large historic B&B/hotel I get people postulating about the expense of staying without regard for the cost of keeping the place open. If you stay in a place like this you get what you pay for, a slice of something that is far beyond a bed for the night. Cavanac isn't cheap but it is worth every single centime.

Room Tip: Ask for rooms in the main tower of the chateau
