I am a regular business traveler to Salt Lake City, and I have in the last 2+ years found myself staying consistently at this Residence Inn. The staff have proven very capable, friendly and responsive, the rooms are very clean and well-maintained, they have upgraded to a solid free wireless Internet for the hotel and the breakfasts are excellent. In addition, even though it is not far from the I-80 Freeway, it is not bombarded by freeway noise.
Perhaps the only draw-back is that you are not close to any real selection in restaurants or nightlife. On the other hand downtown SLC is literally 10 minutes away, and there are closer stops for groceries or other needs. SLC does great work at keeping freeways clear of snow and ice in the winter, so even in the snowy months I'm not worried about needing to travel from the hotel into the city. (There is one restaurant, Robert's, withing walking distance, and they are a decent place to get lunch or dinner - and the brownies are amazing.)
I highly recommend this hotel. I like the Residence Inn set-up anyway - full kitchen, clean, good work space - but this one stands out,
