The first thing that impressed us about Padaste is Service. Everyone is smartly dressed, speaks excellent English, and implicitly anticipates your needs. Someone has provided top-notch training to Padaste’s staff, as they are efficient, prompt, and attentive. Upon our arrival, we were taken immediately to our table for a delightful dinner, prepared by a chef with a penchant for nuance and detail that we’ve never experienced before — haute cuisine served in a glassed-in dining room facing a broad, shaded lawn beneath a canopy of trees within a boreal, coastal setting. Dining at Padaste allows you to experience a surprise at every turn — “Dill Snow” replaces sorbet and “Hay Smoke Squab” replaces pheasant-under-glass. A key element about Padaste’s dining experience is that the chef uses seasonally available foods, much of which is grown on-site. The proof of this is found in taking a walk out to the bay where one finds a wood-burning sauna, sun deck, and canoe launch for guest use — I observed every summer wildflower used to garnish our desserts growing wild in the wetland fields. The spa is exceptional — the steam sauna, hot sauna, cold immersion tub, and hay baths certainly are to be experienced. The surroundings are quiet, rural, and peaceful and one can take in the beauty at lunch outside.
