If I could give Karen's terrific dinners six stars out of five I would. The meals matched any of the finest restaurants I've visited in France or Spain along the coast, with fresh seafood selections and inventive soup and salad creations. If you don't book dinner here every night you're missing a world-class experience. From Karen's seaside finca (farm) she picks fresh fruit which she whips into superb blended cocktails: home-made limoncello, quadratto banana daiquiris, pina coladas with fresh pineapple and their own coconuts. She serves the best ceviche I've ever had, tasty crusted filet of red snapper, the freshest vegetables and hearts of palm salads. Her 5-course meals are out of this world, and Parisian chefs would be jealous of her inventive cuisine. Add to this a sunset view over one of the most spectacular little slices of beach on the blue Pacific. The deck floats out into the jungle canopy, where howler monkeys and iguanas abound. Fragrant flowers perfume the air, and the lilting songs of tropical birds accompany you. No wonder world travelers vie for a space at this wonderful B&B. The lodging is quite rustic, with palm-frond shaded windows and lovely outdoor shower. There's only one room, so you will have it to yourself. This is a birder's dream, with shore and forest birds available the same day. We took daily walks on the finca, with sightings of black-headed trogons, northern orioles, great curacows, osprey. We saw our first Jagarundi, which was the envy of Monteverde guides. I hope this place never changes; I would hate to see it become a Four Seasons Resort.
