This parador is totally modern, built around Roman ruins at the top of a hill. It's an eyesore and a blot on a beautiful landscape, but it's a great place to stay. The squat, bulky, unadorned style that makes the building look so terrible from afar works really well in the interior. There are no chi-chi, faux-antique decorations, just simple, heavy furniture, thick wool rugs and really lovely mattresses, with all the plumbing in perfect order and everything spotless.
I find the Spanish custom of tiny little breakfasts quite problematic, so I was delighted with the buffet: it was the biggest I've ever had. Better still, there were red squirrels leaping about in the pines outside the windows while we ate. Our only complaint was that you have to wait for the waiters to bring you tea and coffee, which they can never do fast enough for my taste. Apart from that, I didn't notice the service, which is always a good sign.
For dinner we went into town, to a restaurant in the main square. I would always recommend doing this if you can because the food tends to be better, but I especially recommend it in this case because it's a pleasant 10-minutes walk and the centre of Soria is nice without being artificially touristy.
