I chose this hotel as an overnight stop enroute from Carcassonne to Milau. Up in the Black Mountains, Soreze is a small town built around this historic 8th century abbey, which, following the French Revolution, became a private boys school. Now a luxury hotel, it has 2 buildings--one a 2-star hotel and the other a 3-star. We stayed on the 2nd floor of the latter; our room was good-sized with a desk, mini-bar, and a large window that opened upon the abbey's courtyard. We enjoyed dining at the well-appointed restaurant downstairs and received excellent service. The stone floors display interesting inlay detail and the majestic staircase provides a grand entrance for a unique visit. When all you can hear during the wee hours of dawn are the coos of pidgeons and the peal of the churchbells ringing the hour, there is something so peaceful and secure for a restful sleep. Note: to reach Soreze takes a bit of map calculating, but the scenic, tree-lined roads help to wind you down.
