“Perfect Languedoc Chambre d'Hôte”

David Coles, effectively the Chef-Patron, of this beautiful late 19C manor house, is a wonderfully warm host whose staff (lovely Kiwis, Jane and Tina) also strike the perfect balance between staying with what feels to be old friends, and having the comforts of a boutique hotel.

Fabulously tasteful decor; beautiful gardens and secluded pool; a charming trio of miniature dachshunds; great location in easy reach of Carcassonne but well placed to explore the Languedoc and outstanding value for money.

We stayed in the Rousanne room, four-poster bed and facing the road, but traffic noise not a problem as the windows were double-glazed. Wifi was a little patchy, but it was free and that's an all too precious rarity.

David cooks on Mon/Wed/Fridays and the 4 course meals were consistently supertasty and of excellent provenance and seasonality. On other nights, local eateries (especially En Bonne Compagnie in nearby Homps - outstanding) are plentiful but do ask the staff to make a reservation especially if you are arriving on a weekend evening.

There is also the convenience of a good supermarket in very close proximity.

I will definitely return, of that there is no doubt, you can't go wrong choosing the Domaine.

“5th time there & still wanting to return!”

This was our fifth visit to David and Graeme's and as always we came away wishing we could stay longer. This is a perfect haven for those of you who, like us, lead very hectic lifestyles. Time to unwind, switch off and just soak in the sun, swimming pool and wonderful cuisine prepared by David! The staff are fantastic and every need is catered for - nothing is too much trouble! On the nights David is not cooking, the local pizzeria, La Belle Volta, is a must! This is truly our idea of 'heaven on earth'! We will return again and again....

“A little piece of heaven”

Stayed here with my partner in late July '11. From the moment we arrived, to when we left, we couldn't have been better looked after, or felt more relaxed. The staff here are really what makes a stay at this B&B outstanding.

The accommodation itself was equally marvellous. We stayed in Carignon, which has a beautiful view out over the lush gardens - heavenly to wake up to every morning. Spotlessly clean everyday, and we slept soundly every night.

We were cooked a fabulous meal on our first night, which we ate outside with the other guests which was a really nice way to meet everyone. During the day, we either lounged undisturbed by the pool, or drove off around the surrounding countryside. It's a perfect base from which to explore. On the nights where dinner isn't served, we ate locally (a couple of decent places within walking distance) and on one night, drove to nearby Homps and had a great dinner at En Bonne Companie (highly recommended)!

All in all, this is a lovely spot and one I'm so glad I've found!

“The most beautiful hotel-the most amazing staff!”

We had a brilliant and truly memorable week at this amazing hotel. Not only is it exquisitely beautiful from every view and aspect-the building, the gardens, the pool area, the interiors are beyond beautiful-Thai silks used throughout and each piece of furniture chosen with love and attention to detail-and great good taste.
Really though it is the work and genuinely generous attitude of the staff that makes a stay here so special. We arrived hot and bothered from the airport-and were immediately offered the most delicious lunch. This welcome-(with all the staff rushing out to greet us and take our bags showing us to our gorgeous room with ensuite , a sitting room and a four poster bed) is my lasting impression of this wonderful week. Once we had freshened up we sat under the trees admiring the garden and enjoying the freshest and most glorious salad, french bread, local cheeses, and wine.
This view became much loved in the week as we had our freshly prepared breakfast out their each very warm and pleasant morning. The jams, bread, cereals and marmalades all delicious are all 'home made' by David one of the owners.
The staff are all so helpful, unobtrusive yet always there to ensure the most comfortable stay. They go beyond to make your stay the best ever.
The ethos of the hotel is very much about making everything fit around you the guest. This stems from the leadership of the owners David and Graeme. David is not only a first class hotelier but the most incredibly skilled and gifted chef. The hotel bears the stamp of this partnership but never more so on the nights that David cooks one of his famous four course meals-on both night we were able to enjoy this experience- the food had us in raptures and the wine flowed!
We would just like to say thank you to David and Graeme and all the staff-we did not want to leave and we will be back!
As we left new arrivals were enjoying their first impression-I was so jealous!
I cannot recommend this hotel experience highly enough-go see for yourself.

Room Tip: All the rooms are exquisite.

“A proposal to remember!”

My partner and I stayed here for 3 nights, returning home yesterday. We had read the many glowing reviews of the hotel and and were slightly perturbed to read the couple of recent negative reviews but we are happy to report that they were obviously false and are very glad to see that they have now been removed from tripadvisor.
We would definitely agree with many others that have stayed at Quat'Saisons, that the house and gardens are beautiful and the staff couldn't be more helpful. We had dinner at the hotel one night and David's cooking was superb.
We stayed in the Carignan room which overlooked the lovely gardens at the back of the hotel and we had no problem with noise. We did find the bed to be a bit too soft for our taste (but this is purely a personal preference and dodgy backs!) but the room was lovely and in fact the whole house is filled with fantastic furniture and ornaments from around the world.
On the first night of our stay I proposed to my partner, while dining at the superb En Bonne Compagnie restaurant in Homps. This went very well as she accepted! and the night was made even more memorable as we had a huge thunderstorm while travelling back to the hotel and the electricity briefly went off in the village plunging the hotel into darkness!
In summary, we had a really good, memorable time and would highly recommend Le Domaine aux Quat'Saisons.
