David Coles, effectively the Chef-Patron, of this beautiful late 19C manor house, is a wonderfully warm host whose staff (lovely Kiwis, Jane and Tina) also strike the perfect balance between staying with what feels to be old friends, and having the comforts of a boutique hotel.
Fabulously tasteful decor; beautiful gardens and secluded pool; a charming trio of miniature dachshunds; great location in easy reach of Carcassonne but well placed to explore the Languedoc and outstanding value for money.
We stayed in the Rousanne room, four-poster bed and facing the road, but traffic noise not a problem as the windows were double-glazed. Wifi was a little patchy, but it was free and that's an all too precious rarity.
David cooks on Mon/Wed/Fridays and the 4 course meals were consistently supertasty and of excellent provenance and seasonality. On other nights, local eateries (especially En Bonne Compagnie in nearby Homps - outstanding) are plentiful but do ask the staff to make a reservation especially if you are arriving on a weekend evening.
There is also the convenience of a good supermarket in very close proximity.
I will definitely return, of that there is no doubt, you can't go wrong choosing the Domaine.
