A beautiful setting in rugged countryside, with the best sunset that I have seen in France. The rooms look out over the rolling hills and are stylish and modern. The hotel which is focused around the synonymous chef's restaurant, is good, but service was a bit lacking - sitting in the lounge we would have waited forever to get a drink after driving 500km until we went looking for help. This is a little thing, but this was an expensive place, both from the hotel perspective and from the restaurant too, so you should expect a level of response.
The meal at dinner was excellent and the food, probably the main reason most would go here apart from the location itself was also excellent. The clientele were nearly entirely French and they were also appreciative of the talent in the kitchen, which is no mean feat.
The gastronomic menus are huge and expensive. If I were going again, I would probably enjoy the a la carte menu more, but this is just personal taste. A nice touch was the gift of a rucksack with the Bras logo to go exploring the region, as was the ability to replace breakfast with a discovery rucksack to take on the road to keep you fed and watered. We also liked the home made lemonade and soft drinks in the free minibar.
A good, but expensive experience, with service a bit lacking outside of the restaurant where the reverse was true and service was almost over attentive.
A long detour in to the Aubrac, but well worth seeing this beautiful part of France. Not sure I would return especially, but certainly something we enjoyed and will remember forever.
