A long drive from Montpellier to Laguiole over the magnificent Millau viaduct found us at the doorstep of this modern and luxurious hotel. Six Australian friends had come here for a special celebratory dinner. We were not disappointed. However to be very critical of the dehydration menu we felt the meat dish of local lamb could have been more interesting. The first three courses were outstanding, perhaps three desserts was a bit much, however how often does one eR like this?....and this from people who know and love their food. We thought the accommodation was fabulous and making use of the backpacks to hike the forest.is a must after the amount of eating. We would highly recommend this for a very special experience.

A beautiful setting in rugged countryside, with the best sunset that I have seen in France. The rooms look out over the rolling hills and are stylish and modern. The hotel which is focused around the synonymous chef's restaurant, is good, but service was a bit lacking - sitting in the lounge we would have waited forever to get a drink after driving 500km until we went looking for help. This is a little thing, but this was an expensive place, both from the hotel perspective and from the restaurant too, so you should expect a level of response.

The meal at dinner was excellent and the food, probably the main reason most would go here apart from the location itself was also excellent. The clientele were nearly entirely French and they were also appreciative of the talent in the kitchen, which is no mean feat.

The gastronomic menus are huge and expensive. If I were going again, I would probably enjoy the a la carte menu more, but this is just personal taste. A nice touch was the gift of a rucksack with the Bras logo to go exploring the region, as was the ability to replace breakfast with a discovery rucksack to take on the road to keep you fed and watered. We also liked the home made lemonade and soft drinks in the free minibar.

A good, but expensive experience, with service a bit lacking outside of the restaurant where the reverse was true and service was almost over attentive.

A long detour in to the Aubrac, but well worth seeing this beautiful part of France. Not sure I would return especially, but certainly something we enjoyed and will remember forever.

“Modernist moorland retreat”

We've stayed here twice. Whilst it's in the 'middle of nowhere' it's totally worth a hundred mile detour anytime ! A family business which is very professional but friendly, we were offered a tour of the kitchens in the morning on our first stay. Mr Bras was giving rigorous training to junior chefs and his mother who originally owned & ran a hotel restaurant down in the local town was in for lunch in the kitchen with staff. This is the BEST hotel we've stayed in France after travelling there for the last 20 years. But on a table next to us was a seven year old girl - how can she top that for an experience ? Diners were a wonderful mix of local people and visitors to the area. Everyone seemed to be welcomed with equal enthusiasm. Michel Bras is the 3 michelin star chef owner. The hotel is a stunning glass and stone structure perched on a ridge in a moorland location. On a clear night you can see the lights of towns and villages 20 miles away (that's if you're not totally focussed on your food !) Enormous bedrooms and bathrooms all look out over the moor and most rooms have a patio or balcony with lounge furniture to sit out in fine weather to admire the views. Philippe Starcke designs everywhere.
