My husband and I stayed here for 2 nights in February 2012 - a fantastic time of the year to visit a city that can become so packed with loud American tourists during the summer;) Bruges is an absolutely beautiful city and well worth a visit.
The Grand Hotel Casselbergh was clean, very central and we had a really pleasant stay. We were in the new part of the hotel, and had a beautiful view of the cathedral and rooftops, and the frozen canal that people were walking along:)
Our room was clean and comfortable, with an actual king-size bed, as opposed to two singles pushed together.
The bathroom was clean and new enough to feel pleasant. The shower was only okay though, as there was nowhere to stand in the shower where you weren't directly under the shower head - no big complaint - just irritating.
We had a horrible sleep the first night, as the air-conditioning didn't seem to work and it was far too hot and stuffy. The second night, we opened the window, despite the freezing temperature, and slept like babies. A bit of fresh air can do wonders in bigger hotels with all that stuffy air circulating around the rooms!
Breakfast was good - nothing utterly amazing, just good for a hotel breakfast. The croissants were very fresh and were among the best we've had at a hotel breakfast. We didn't have any hot food, but there were bacon, eggs and sausages, I think.
The lounge area is comfortable and cosy, and we spent about 4 hours here on our last day before our train left and we'd had enough of walking around. No snacks available in the bar, but plenty of drinks.
The staff at the hotel are friendly and helpful, and responded to my many emails before arriving promptly and in a friendly manner. They even left a box of chocolates in our room, I think because I advised them we were staying for my husband's birthday - so nice of them! They were pretty amazing chocolates too, from Roose's:)
We would highly recommend staying here and would happily stay here again if we return to Bruges.
