Over the years I tried several different hotels in Turin, none to my complete satisfaction. Now the NH Santo Stefano might be the right place, and I will certainly book there next time I have to go to Turin.
Online reservation through the NH site was a pleasant surprise: no credit card was required if you guarantee your arrival by 16.00 (4 pm).
The modern (or perfectly restored?) building is in character with the surrounding monuments that range from the roman Porta Palazzo to the composite cathedral. Beautiful lobby, open from ground floor to the top of the building, unusual for Italian hotels. Take the time to go to the terrace on the top floor, to enjoy the view of the center of Turin
Spacious room (a deluxe double) with pleasant and convenient modern furniture, also the bathroom (shower, no tub) was spacious and with the usual NH kits (including toothpaste, toothbrush, shaving cream and razor). When we (I was with my wfe) arrived there was only one towel per type, we forgot to ask for a second set of towels, but when we returned in the evening we found two of everything - way to go.
The only small inconvenience was that the thermostat apparently resets to the defaults when you leave the room, so you have to set again your preferred temperature and fan speed.
Despite being on the first floor overlooking a street with car traffic the room was very quiet, and we did not hear any noise with the windows closed.
Excellent breakfast (included with the price of our room), with a good choice of meats, breads, juices, etc., plus a complimentary newspaper.
