I stayed at the Maison sans Frontière this past October and cannot recommend it highly enough. The room and bathroom were very clean with a very comfortable bed. The breakfast was tasty with the homemade confitures (jams). It is a bit of a walk to the Cité, but it is beautiful along the river with spectacular views of the walled city, so I didn't mind one bit. It is about a 15-20 minute flat walk from the train station, but it is almost completely straight so not too hard to find. Unfortunately, the very heavy rain "dampened" my experience in Carcassonne, and the rail strikes cut it one night short, but Marlène and Michel were very understanding and in fact helped me to make it out on the last train before the strike started- otherwise it would have severely impacted my travels. They even checked into places to stay at my next city in case my hotel could not accommodate me! I cannot say enough nice things about them as people and hosts. I speak French, but they were so warm and welcoming, I find it hard to believe they treat anyone any differently- they welcome people from around the world and respect all people from different cultures and backgrounds. I cannot recommend them highly enough- all places should strive to welcome people as warmly and friendly as them- they really try and obviously enjoy what they do. Without a doubt, I will be recommending them to friends and family who are traveling to Carcassonne.
