We went into the bar of this grubby hotel for a drink after a walk around this lovely town and its beautiful ruined abbey. A pint of real ale, which was nice, and a glass of red wine. We were served by a bald guy with glasses in a suit, he was obviously not the barman. He poured the dregs of one bottle of wine in a glass and thinking he was going to discard it, I did not pay much attention. However, when my wife finished her drink she almost choked, the bottom of the glass was full of residue which is normally decanted off. When I went over to this person to tell him about it, he did not even apologise and said 'he would inform the supplier'. I pointed out to him that bad manners and not discarding the last dregs of a bottle of wine in a hotel is not to be tolerated, he then apologised but did not seem to be aware of his mistake. Good Scottish hospitality, NOT.

Firstly your response to your wife having sediment in her glas does not make the hotel "shabby" as it would have been unlikely that you would have used the hotel if this was the case before you enterred.
Secondly I served your wine, which incidentally is a South African Shiraz Cinsault and does not require decanting in the same way a vintage Bordeaux would. We expect to use all of the wine in the bottle not uneconomically throw part of it away and usually all of the wine in the bottle is fully drinkable. Unfortunately we appear to have been supplied with a batch that was heavily sedimented of which we had no inclination or information until the incident with your wifes drink. All of the bottles held in stock in the hotel where removed from sale and the supplying merchant sent their representative to view the wine which after inspection was completely removed from the hotel to be taken by their wine buyer to the South African merchant for further investigation. Our supplier restocked the 16 bottles at no cost to the hotel as a result of dealing with the complaint and offer their unreserved apology for this unexplained incident.
As I said to you when you loudly and rudely interrupted my conversation with someone else, I would report the problem - this was immediately done and rectified by the supplier. At the time of you interruption I offerred my apology but your aggressive rant about my lack of wine service skills renderred the apology irrelevant in your eyes. I failed to react to your loud and agressive manner in an appropriate way by returning to my interrupted conversation for which I apologise as I should have continued to deal with the matter in hand until concluded
As I explained we do not expect to decant every bottle of wine served and in having such a glass returned as that from your wife we take immediate action to rectify the problem with our suppliers which is again as I explained.
It is a pity that these exchanges are now aired on faceless public information sites under the pretext of reviews and the immediacy of communication that technological life now seems to demand.
I apologise to your wife again and unreservedly so for having received a glass of wine that was so heavily sedimented. I promised you action in dealing with the matter which was taken immediately and followed through with our suppliers, and we have not had a repeat of the circumstances after so doing.
