We stayed 2 nights at the Convento de la Luz as a base to see Caceres on one side(20km) and then a day in Portugal (Monsanto--1.25 hours away) in the other direction. The hotel is a 17th century convent that has been luxuriously converted to Parador level. It is on the out-skirts of the village of Brozas so you need a car to get there. The setting is in the country with expansive views, and the building is wonderfully restored. Both the room and the public areas were excellent. We actually liked this place better than the Parador at Oropesa which we stayed at next.
A quite satisfactory breakfast was included("heavy continental", meaning cheeses and cold meats included) and we ate at its restaurant one evening which was very good--- worth the $60 tab for 2 with a moderate wine.
We paid under 60 euros/night with breakfast, and think it was a terrific bargain. We learned of the hotel through the euroresidentes.com link for Caceres.
