Description: Jacobs Bar & Kitchen is a restaurant in the city center with a focus on local ingredients, sustainability, natural wines and good ethics. We do not hide the fact that several of our chefs have won prestigious awards in spite of their young age, winning competitions such as Seafood Chef of the Year in 2005, 2008 and 2010 and the Nordic culinary competition "Linie Award" in 2009. We use sustainable ingredients, preferably local and focus on meat and seafood in relation to the season. On our menu you will find no farmed fish or endangered species such as tuna and salmon. We serve local beauties like saithe, Norway lobster, mussels and mackerel. We select and utilize the "difficult" parts of the animal, meat that must be nurtured and given love to get a good result, such as cheeks, neck, chest and shoulder. The food is made with an eye for good craftsmanship, good taste and quality. Jacobs Bar & Kjøkken was the first restaurant in Norway to focus on natural wines. We focus on small winemakers (farmers) who work with their hands. They avoid the use of conventional pesticides and herbicides in the vineyards, utilizing only organic preparations. Some use nothing at all. These wine makers chose to ferment their wines spontaneously, rather then adding selected yeasts to force fermentation. They don't like to use enzymes or chemicals during the winemaking process, nor do they like to store their maturing wines in barrique. They use very little sulphur, or none at all. The wines are often bottled unfined & unfiltered and often produce only a few thousand bottles. Our wines come in all colors and we like them that way! Natural wines are very food friendly and often have sediment, so please complain if you don't get any! Our philosophy when selecting our winemakers is simple. We select wines where the fruit quality is clear and transparent. No tricks, no makeup, nothing.
