Description: Restaurant Le Gaigne in Paris' fascinating Marais quarter aims to step lightly upon the earth. With a commitment to using local, fresh, organic or alternatively produced ingredients where possible, Le Gaigne wears its green credentials very gracefully indeed. Chef Mikael Gaignon is a young wonder, having worked in two Pierre Gagnaire restaurants as well as Le Pre Catalan and Le Table du Baltimore before opening this, his first restaurant as chef and patron too. The dining room has an air of elegant simplicity in tones of aubergine and pink with fresh flowers and soothing artwork. The dishes on Le Gaigne���s French menu change frequently, of course, but may include organic egg en cocotte with cream of spinach, carrots and celery, pan-fried seabass with lentils ravigote, and minted chocolate in moelleux. Gaignon���s energetic creativity is apparent in every dish. All wines are French and the service is by charming Aurelie.
