Japanese inspired dishes using local organic produce and prepared with a good deal of flair. The staff were friendly and efficient despite it being quite busy. Had cocktails at the bar downstairs on our second visit which were also spot on.

Dinning upstairs with view of the bar downstairs. Great food to be had, we had the sashimi and the hokkaido deer. Friendly and fast service.
We over ordered when dinning at this place expecting a repeat of the small servings experienced from earlier visited establishments. A pleasant surprize. We paid about JPY6000 for 2 which included 2 x 500ml beers at JPY 950 each. At JPY4000, our food bill was fantastic value and one of the better meals during our visit to Niseko. Recommended !
Ok ..when you hear the Name Wild Bill's a couple of things go through your head. I dare you to make a 6pm reservation, order the Crab Rice, Daikon Salad Sashimi plate, Venision, Pork Belly and all those pre-conceptions leave your mind real fast. Do your self a favour!
When I saw we were booked at a place called wild Bills I was a little bit worried. Thought it would be Mexican place but not so, at least I only saw the Japanese dishes on the menu.
Anyhow, we ordered Japanese food all around and a lot of it. Overall most dishes were good, nice flavor and good quality...

compared to our other dining experiences in hirafu, i found little to interest me on the menu. The serves were small and expensive. I would not go back.
In an out-of-the-way part of Niseko, Wild Bills seemed pretty calm to me in the early evening - probably heats up quite a bit later in the night and on weekends.
Food wasn't bad - I had Kingfish Cheek - pretty damned good. Pork wasn't bad either.

After a day on the slopes we wanted something tasty, warm and filling. We needed to book through the hotel and went to the first sitting at 6pm. Food we had was tapas style and the Pork was to die for, it fell apart. We would certainly go again......
