WE had a one bedroom suite on a recent Disney trip (Between Christmas/New Year 2011). The room was great and a pretty decent price. The breakfast buffet helped get us out quickly in the mornings. If you want a reasonable quality hotel located near to Disney Parks and attractions then Fairfield Inn is well worth considering. It takes minues to drive to Downtown Disney and the parks & being so close to I4 you can get around the area really quickly.
