There are some touristy tours, but Lustau (depsite being next to Harvey's Bristol Cream!) is a traditional sherry maker with good tour guides, and excellent tasting at the end. We had a very uncommercial tour in this very grand cathedral like bodega. We saw American oak barrels being prepared to be passed on for whiskey maturing and were able to taste wine directly from the barrels. Our guide, Roger was excellent and gave us the fascinating history of sherry making in Jerez. Their wine tasting was exquisite. More
