William does a terrific job engaging his students and explaining the "why" behind his techniques. We had a class of 7 and the space was perfect to observe, do and try. Highlight of my trip. I just got home, and am desperately searching for 00 flour so I can get started on making pasta. Also, see my review on Old Taverna Sorrentina B&B. Wonderful classes (I took 2), wonderful owners, wonderful Inn. Fantastico!!
